Grape variety: 35% Grenache, 30% Cinsault, 15% Carrignan, 10% caladoc, 10% Syrah

Vinification: Protection of just harvested grapes against oxydation. The two grape varieties are vinified on separate tank. Straight pressing. Cooling of must at 8° C. Must racking during 18H. Fermentation of clarified juice under low tempratures (14-16°C) after yeast add. Racking and blocking of malolactic fermentation.

Tasting comments

Color : Very clear, limpid and bright.
Nose : Small red fruits, hint of mandarin. Slightly minty.
Bouche : Fresh, easy, slightly tangy. The amyl (English candy) side is very present.

Keeping: 2 year

Matches: appetizers and any other summer dish.
