The cuvée « Terre d'Antan », AOC red Ventoux, is a special cuvée, created from the best terroirs of the Bonnieux cellar. Restricted surface and very small yields allow us to product 4000 bottles of this wine. The plots of vineyard are destemed and the vines leaves are thined out to obtain a good sanitary state of the crop and a perfect phenolic ripeness.

Characteristics: Fleshy, generous, wooden.
Terroir: Only one parcel of Grenache and one parcel of Syrah are used for this wine. These vines located at the top of hillsides, on well-drained gravely soils, with a southern exposure.
Grape variety: 95% Black Grenache and 5% Syrah
Vinification: Cold maceration before fermentation. The grapes are vinified on separate tanks.
Traditional fermentation with daily pumping over and treading. Maceration during 3 weeks.
Ageing in new oak barrel during 12 months.
Color : deep red color.
Nose : very aromatic. Wooden notes added to jammy red fruits.
Mouth : complex and harmonious mouth with a rich well-rounded tannic structure and a final marked by the wood ageing (vanilla). To be kept.
